From the Taraba-gani king crab to the Ke-gani horsehair crab, a diverse array of crabs are served in Japan,but one variety,highly valued as a fine culinary ingredient that becomes available in the winter, stands out in particular for its popularity. This crab, sought after as a winter delicacy, is the Zuwai-gani snow crab (or simply “Zuwai-gani” in Japanese). To conserve this marine resource, harvesting of the Zuwai-gani snow crab is permitted only for a limited time during the winter. So to experience this delicacy in all its freshness and deliciousness, it is recommended you try it during the winter.
